Canonically Zed was a nickname the DRF gave the specimens during the initial outbreak in London.

No, they aren't. It is just a nickname. Technically they are specimens.
But who cares?
Nah. I guess 'zombie' is something that was once alive, then died, somehow got reanimated, and usually is undergoing some level of decay.
If 'zombie' meant just anything slowly shambling towards you with ill intent, the term would apply to a lot of old ladies going back from church on Sunday morning.

It was different when they were specimens 
The name change was probably because it's quicker and easier to type rather than zombie? I mean I would rather type KFGameContent.KFPawn_ZedClot rather than ZombieClot or SpecimenClot. It's 3 letters.
As for the origin the only thing I can imagine it being is that one scene from shaun of the dead.
