Is there a way to see the exact stats for the different weapons in the game files somehow? Like for example how the accuracy of the M1 compares to the carbine, and the difference between the jap SMGs.

Yes.
Navigate to: Program Files/steam/steamApps/common/red orchestra 2/Development/Src/ROGame (or RSGame)/Classes
Under the Src folder there is also ROGameContent (RSGameContent) which handles variations based on levels and such.
Open any of those files with a suitable text editor. Not 100% certain but you may need to download and run the SDK for the files to appear.
