Guinness Roast

3 lbs beef rump
3 tablespoons coarse black pepper
1 pint Guinness Stout
1/4 cup olive oil
1 tablespoon flour
2 cloves garlic
1 bay leaf
4 slices carrots
3 cubed potatoes
Preheat oven to 350f, crush garlic mix with pepper and rub in to beef.
Place beef in a roasting tin and mix Stout, 1 cup of water, bay leaf and oil, add to roasting tin. Roast for 90 minutes, add vegetables and continue for 30 minutes.
Remove beef and vegetables from tin, pour liquid from tin in to a sauce pan, and bring to boil, add 1/2 cup of water and 1 tablespoon of flour mix gradually. Simmer until thick. Serve.

Here one of my favourite desserts, its always a huge success when i cook for people :p

Buy some toblerone chocolate and rolo's candy and whipped cream

Melt the toblerone and mix it with some thick sweet whipped cream.
The mixture depends on taste but you basically get a really light creamy sort of chocolate pudding that tastes awesome. (this pudding can be made early the whipped cream makes sure that it doesnt get hard, so you can put it in a fridge).

Just before serving, melt the rolo's and add that as a layer on top (dont let it cool as it will get pretty hard), add some more whipped cream on top and a bit of chocolate for some flair. Seriously it will taste awesome :p.

Beef and Guiness pie is the ****! This will make 8 of the ****ers so reduce the recipe by proportion to make smaller amounts. They've always been a smash with guests when I make em :D

Ingredients

2 kg diced chuck steak
3 sliced onions
4 crushed cloves garlic
1 tbs oil
2/3 cup plain flour
400ml Guinness
2 cups beef stock
Ready-rolled puff pastry
1 beaten egg
Cracked black pepper to taste

Brown 2kg diced chuck steak in hot oil. Set aside. Cook 3 sliced onions and 4 crushed cloves garlic in 1 tbs oil until golden. Sprinkle in 2/3 cup plain flour and cook for 1 min.

Return meat and juices to pan, add 400ml Guinness and 2 cups beef stock. Bring to the boil. Season with pepper to taste. Reduce heat, simmer for 2 hours until tender and sauce has thickened.

Preheat oven to 200

IRISH BEEF STEW WITH GUINNESS STOUT
  • 2 tbsp olive oil
  • 3 bay leaves
  • 2 lbs beef stew meat, cut into 1 1/2 inch to 2 inch cubes (with some fat)
  • 1 large yellow onion, peeled and cut into 1/4 inch slices
  • 2 cloves garlic, peeled and chopped
  • 1 tsp dried thyme, whole
  • 1 tsp dried rosemary
  • 2-3 tbsp all-purpose flour
  • 3/4 cup beef stock
  • 1/2 cup Guinness stout
  • 1 tbsp chopped parsley
  • 1/2 lb carrots, sliced
  • salt & freshly ground black pepper to taste

  1. Heat a 6-quart stove-top casserole and add the oil and the bay leaves. Cook the bay leaves for a moment and then add the meat.
  2. Brown the meat on both sides on high heat. Add the sliced onion and cook for a few minutes until it is clear. Reduce the heat to low and add the garlic, thyme, rosemary and flour, and stir well until smooth.
  3. Add the beef stock and stout; simmer, stirring, until the stew thickens a bit. Add the remaining ingredients and cover.
  4. Place the pot in a 275 F oven for about 2 hours, stirring a couple of times. Check for salt and pepper before serving.
