From what I've seen UT3 had a Linux server binary that had to be downloaded from somewhere, UE3 has probably always supported Linux servers but the people who made the games based on UE3 made a decision not to support Linux so didn't bother with a binary for Linux servers

Most of the cases with no Linux support usually is the game supports only DX9 - 11. Linux only seems to support OpenGL so most companies tend to save money and make the game Windows exclusive
That or servers just don't want to act the way they should on Linux or take too much effort to make due to all the different distributions of Linux
